Smash Burgers at Home: The Technique, the Sauce, and the Build
Smash burgers have taken over — and for good reason. The thin, crispy-edged patty with the right sauce is one of the best things you can eat. Here is how to make them at home.
Smash Burgers at Home: The Technique, the Sauce, and the Build
The smash burger is not a trend. It is a technique — and it produces a better burger than any thick patty you have ever made.
The science is simple: smashing a small ball of beef onto a screaming-hot flat surface maximizes the Maillard reaction (the browning that creates flavor). You get crispy, lacy edges, a thin patty that cooks through in under two minutes, and a surface area that holds sauce perfectly.
Here is how to do it right.
The Equipment
You need two things:
- Cast iron skillet or flat-top griddle — must hold high heat
- Heavy spatula or burger press — for the smash
A regular nonstick pan will not work. You need a surface that can take the heat.
The Beef
3 oz balls of 80/20 ground beef. Do not form them into patties. Just roll them into loose balls. The smash does the shaping.
Season after the smash, not before. Salt draws out moisture. You want the beef dry when it hits the pan.
The Technique
- Get the pan or griddle ripping hot — 450°F or higher
- Add a small amount of butter or beef tallow
- Place the beef ball on the surface
- Immediately smash it flat with your spatula — press hard, hold for 10 seconds
- Season with salt and pepper
- Cook 60–90 seconds until the edges are crispy and brown
- Flip once
- Add cheese immediately after the flip
- Cook 30–45 more seconds
- Remove and build
The Sauce
This is where most smash burger builds go wrong. People use ketchup, which is loaded with sugar and competes with the beef. Or they use a "special sauce" that's just mayo and ketchup.
Yooze It Sauce® Original is the smash burger sauce that works. Apply it to both buns — the creamy tang complements the crispy, beefy patty without overpowering it.
0g sugar. No corn syrup. Just bold flavor.
The Classic Smash Burger Build
- Potato roll, toasted on the griddle
- Yooze It Sauce® Original on both buns
- Double smash patties (3 oz each)
- American cheese on each patty
- Dill pickles
- White onion (raw, thin-sliced)
- Optional: yellow mustard on the top bun
That's it. The simplicity is the point.
Double vs. Single
A single smash patty is a snack. A double smash burger is a meal. Stack two patties with cheese on each — the cheese melts between the patties and creates a layer of flavor in the middle of the stack.
