Homemade Fries: The Double-Fry Method for Restaurant-Quality Results
Restaurant fries are crispy on the outside and fluffy on the inside because of one technique: the double fry. Here is how to do it at home — and the sauce that makes them great.
Homemade Fries: The Double-Fry Method for Restaurant-Quality Results
Homemade fries that are soggy in the middle and pale on the outside are a technique problem. Restaurant fries are crispy because of one method that most home cooks skip: the double fry.
Here is how to do it.
Why the Double Fry Works
The first fry cooks the interior of the potato at a lower temperature. The potato becomes soft and cooked through, but the exterior does not brown.
The second fry, at a higher temperature, crisps the exterior rapidly. Because the interior is already cooked, the high heat can focus entirely on creating the crust.
The result: crispy exterior, fluffy interior — every time.
The Potato
Russet potatoes are the standard for french fries. They have a high starch content and low moisture, which produces a fluffy interior and a crispy exterior.
Cut size: 1/4 inch for thin-cut, 1/2 inch for steak fries. Consistent size is critical — uneven cuts mean some fries are overcooked before others are done.
The Soak
After cutting, soak the fries in cold water for at least 30 minutes (up to 2 hours). This removes excess surface starch, which would cause the fries to stick together and prevent crisping.
After soaking, dry the fries completely. Moisture in the oil causes dangerous splattering and prevents crisping.
The Double Fry
First fry:
- Oil temperature: 325°F
- Time: 4–5 minutes
- Result: fries are cooked through but pale and limp
- Remove and drain on a wire rack
- Rest at least 10 minutes (can be refrigerated overnight at this stage)
Second fry:
- Oil temperature: 375°F
- Time: 3–4 minutes
- Result: deep golden brown, crispy exterior
Season immediately after the second fry, while the fries are still hot. Salt adheres to hot fries; it slides off cold ones.
The Oil
Peanut oil has the highest smoke point and produces the cleanest flavor. Vegetable oil or canola oil are good alternatives. Avoid olive oil — the smoke point is too low.
