Nachos are one of the most crowd-pleasing foods at any party, game day, or casual dinner. They are also one of the most frequently mediocre — a pile of chips under a ladle of processed cheese sauce.

Here is how to build nachos that are actually great — and the sauce that ties it all together.

The Nacho Foundation

The chips: Restaurant-style tortilla chips. Thick enough to hold toppings without breaking. Spread in a single layer on a baking sheet — do not pile them up, or the bottom chips will be soggy and the top chips will be bare.

The cheese: Shredded cheese melted under the broiler is better than processed cheese sauce. Use a blend of:

Shredded cheddar (flavor)
Shredded Monterey Jack (melt)

Broil for 3–4 minutes until melted and slightly browned.

The Toppings

Add toppings after the cheese is melted, not before:
